André is committed to the protection of natural food production, supporting traditional artisanal producers and preserving Europe's culinary traditions as a proud member of the association "Euro-Toques Deutschland.” As the Culinary Director of Germany, André believes Chefs in Compass have a real responsibility considering the amount of food served every day, so even small changes add up to making a huge difference.

I Learn as Much as I Teach

“My goal is to pass on my 30+ years of experience in hospitality to young talent and aspiring chefs. Just as important is to listen to the next generation. Nowadays, we have customers from all over the world who want variety. People from different cultures have different expectations while vegetarian and vegan options are becoming more important. Keeping the future in mind, we must prioritize sustainability with ingredients that can be constantly repurposed. That helps us avoid waste.”

At Compass There are so Many Opportunities for Chefs.

“It’s great to see chefs across our business applying for development opportunities and chasing career progression. In the past three years alone, nine chefs from ESS – the sector I work for - have enrolled onto the Marcus Wareing Forward program, with five more joining the program this Autumn.

These types of opportunities are really where the next generation of culinary leaders are being developed. I will do everything I can to help ensure they progress into senior roles in our business in the future. ”

My Advice for Chefs of Today, and Tomorrow:

Chef André Schellenberg is Culinary Director of Compass Group Germany. Andre is characterised by his passion for innovation, international flavours, and creative concepts, which he continues to develop through crossover kitchen styles – inspired by Japanese and French techniques.
